Sepia is considered one of the best fine dining establishments in the country and one of 38 essential Chicago restaurants. Located in the West Loop, the restaurant has a delicious seasonal menu to offer even the most selective of taste buds. The restaurant has a unique history as well as in the late 1800s it was a busy printing shop. When it was being renovated a hidden back store room was discovered. As construction began it immediately began to fill up with sand. All work stopped while contractors determined the cause of the problem. It was discovered that the sand was a booby trap that had been set long ago to prevent the printing plates from being stolen from the original shop. In the 1920 the Trenchermen Building opened as The Luxor Russian Baths. For most of the century it remained open as a place for men to gather for food, drink and a good steam. The communal idea of the bath house inspired current owners to create Trenchermen as a place for the community to meet and enjoy one another’s company. Open in 2012, Chef Pat Sheerin brings a touch of fine dining to each of the restaurant’s specialties including the Muffuletta Burger with mortadella, capicola, salami, mozzarella, provolone, & olive salad and the Cubano Libre Burger (Berkshire pork shoulder, Black Forest ham, and pickles).
